Mom's Zucchini Bread

Looking for something to make with all that zucchini or crookneck/yellow squash that is coming out of your garden???

I have got a yummy recipe for you!! It is my Mom's Zucchini Bread recipe and it is very moist and delicious! If you don't want yellow or green flecks in your bread, just peel the skin off the squash.

Mom's Zucchini Bread

3 cups flour
3 eggs
1 cup oil
2 cup sugar
3 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1 tsp. vanilla
2 cup grated zucchini
1 cup nuts(walnuts are best!)

In a large bowl, combine sugar, oil and eggs. Mix well. Add zucchini. Combine dry ingredients; add them to the wet mixture, mix well. Pour into two greased and floured 9in x 5in x 3in loaf pans. Bake at 350° for 60 minutes or until bread tests done.

Notes: These can easy be done as muffins too! Either use paper liners or grease the muffin tins. Also bake at 350° for half the time(30 minutes). This bread or muffins freezes wonderfully!

Ohhhhhh, warm zucchini bread with butter! Nothing is better. OK, with chocolate would be better. Warm zucchini bread with hot fudge spread on it..... Wait......... I am lost......

Thanks for the post on delicious, zucchini bread. I really love quick breads and wish my zucchini were large enough to make some bread. I just have a problem with where I planted my bushes. They are not getting enough water and they are getting to hot and dry. Well maybe I can remember to move them today, they are in pots.

We really love zucchini bread at our house. I don't make it quite as much now since there are only two of us - I would eat it all. I really love zucchini! I planted some this year so I could have all I wanted but this spring we were deluged with rain and so I am having to baby my one plant along. It did have a blossom this morning so I guess there is hope. Thanks for this recipe. I have a section in my recipe file just for zucchini recipes! Have a wonderful weekend and enjoy that zucchini!

Okay, Let me just say that I still consider myself a beginner cook. This time last year I just started cooking regularly and I have never been to much into baking unless it came out of a box.
Because of this, I follow a recipe exactly. I never substitute ingredients or try to put my own spin on things.

With all that said, I have to ask....the recipe calls for 1 tsp soda. Are you talking about baking soda or soda like you drink (I am a New Englander)?
