Weekly Shopping Trip--ALMOST took week off!
So here is what I got at Aldis to make up my $30 to get the $5 off(sorry no pics!)...

Another "Leftover Makeover"--Potato Cakes
Anyway, today I decided to make some mashed potato cakes!
Potato Cakes
4 cups leftover mashed potatoes
2 eggs
1 cup flour
Mix together and season to taste! I used...
3 tbsp. onion powder
2 tsp. garlic powder
4 tsp. pepper
3 tsp. seasoned salt
bacon bits
1 cup cheddar cheese, shredded
Mix the seasonings into the potato mixture. Make into patties. Place in a skillet with 2 TBSP olive oil and 3 TBSP butter. Fry til golden brown(5-7 minutes) Turn over. Fry til golden brown. When done cooking, drain on paper towels. Serve.
IF you don't feel like doing up the potato cakes you can just melt about 3 TBSP. butter in a frying pan and slap some of the mashed potatoes in the pan and fry them up like hash browns. Sometimes I fix them plain and other times I spice them up with pepper, onion powder, garlic powder, and seasoned salt.

Thankfulness

Thankful that we woke up still breathing the breath that God has instilled in us!
Thankful that we have a family that cares for us!
Thankful for the warm food on our table that God has provided us!
Thankful for the working hands and feet that God has given us!
Thankful for the warmth of our houses!
Everyday remember those mundane everyday things that we take for granted! Life is a vapor and should not be taken for granted!

Glimpse into my Kitchen
I did TWO batches of bread...I let my breadmaker do the work for me in regards to the dough! Then I took the dough and baked it in the oven! I did a batch of "classic white" bread and a batch of honey oatmeal bread. When I follow my recipe for a 2lb. loaf I can get FOUR mini loaves of bread!! They have been great for having as another side to our meals! I think they will make great little loaves for gift giving as well this Christmas season!
Along with the bread, I did a pumpkin pie, pumpkin cake squares, and a bottomless apple pie(I took the other pie crust from my Pillsbury pie crust box and made a lattice top on some apples that sprinkled with cinnamon).
For dinner yesterday, I did up a "taco bar"! I took one of my 1# packages of already brown ground beef out the freezer, thawed it, and added 1 can of tomato soup and 2 TBSP. taco seasoning for my beef taco meat! Then in the fridge, I had some plain baked chicken that needed to get used up so I made up one of my favorite "leftover makeovers"! I diced up the 2 1/2 chicken breasts, added about 1-2 TBSP taco seasoning(I buy in bulk and just shaked it in!) and added enough mild taco sauce to wet the meat. Both meats I let simmer on the stove til heated through and while I shred lettuce and cheese and heat up the taco shells.
This is one of those meals that can less than a 1/2 hour from start to finish and just what the "doctor" ordered after a long day of baking and standing on my feet in the kitchen.
