Apple Cider Muffins

1 ¾ cup flour
1/3 cup sugar
2 tsp. baking powder
¼ tsp. salt
1 beaten egg
¾ cup apple cider
¼ cup oil
1 apple—peeled, cored, diced (optional)
1 tsp. vanilla


In a mixing bowl put all the liquid ingredients in and mix well. Combine all the dry ingredients and add to the liquid mixture. Stir in the apple if desired. Oven @ 400° for 20 minutes or until golden brown.
