Menu Plan Monday 3/28-4/3

Last week I went ahead and planned two weeks’ worth of meals thinking that this week would be an easy “cut and paste” of that second week.  Little did I realize that hubby was planning a little overnight getaway for the two of us without kids and that the weather was going to turn cold at the end of this past week so grilling outside was not an option!  So I decided to do some moving of meals around and have put the grilling meals on to this week in exchange for the inside meals that I had initially planned for this week.

Last week I did an essentials trip of grocery shopping!  I shopped for some deals and also got the essentials that we were missing from the big shopping trip I did two weeks ago.  Since that big shopping trip, my hubby has challenged me to see if I can empty the freezer! He really thinks that emptying the freezer is a necessity so I am working at reducing the items in there in the next month.

Do you have any recipes that use mashed bananas, shredded zucchini, or frozen blueberries???   I have about 20 mashed bananas, 8 cups shredded zucchini, and a good 3 lbs of blueberries in my freezer!!  I would love to make some things up in the next month to reduce them in my freezer.   The rest of the items like sandwich bread, various meats are things that I should not have problems using with the next month.

This week’s meals are simple and using what I have on hand in the freezer and pantry.   I am hopefully going to empty things out of my freezer enough to be able to refill it with “baking goodness” and also have plenty of room for my monthly Sam’s run in a couple of weeks.

This week’s lunches that are listed below are for the kids and me! Unless we are having leftovers, our lunches are served with apple slices or carrot sticks along with fruit juice or water.  Hubby usually takes a dinner leftover along with various snacks for his work lunch so I don’t take the time to really plan his lunches. I just take the next container of leftovers in the stack in the fridge that I have prepared ahead of time.

Great menu! As for the recipe help, here are some suggestions:
Bananas-banana bread or banana nut muffins
Zucchini-add to pasta sauces or quesadillas (with corn, cheese, and black beans)
Blueberries- blueberry bread/muffins, mixed berry muffins (blueberry and strawberries), blueberry pancakes, blueberry waffles

Those are just some off the top of my head! Feel free to visit my blog, email me and I can send you some recipes!

Blueberry overnight coffee cake at Amy's Finer Things.
I looked up some zucchini recipes on Heavenly Homemakers too.
I do love adding blueberries to my pancakes.
