Week of Rejuvenation

I told my boys that I would do something to reward them for their hard work so far this year. I was going to do no subjects and all fun next week BUT I know that dh wouldn't allow it. AND I know that my boys would have a hard time getting back into the swing of things the following week. Soooo I am doing minimal school work which will all be done before lunch and then taking the afternoons off for fun!! Hopefully it will give us all the rejuvenation that we need to continue thru til our next break which will be Thanksgiving.

Schedule as follows:

Mandatory School Subjects: (done every day)

Apple Cider Muffins

1 ¾ cup flour
1/3 cup sugar
2 tsp. baking powder
¼ tsp. salt
1 beaten egg
¾ cup apple cider
¼ cup oil
1 apple—peeled, cored, diced (optional)
1 tsp. vanilla


In a mixing bowl put all the liquid ingredients in and mix well. Combine all the dry ingredients and add to the liquid mixture. Stir in the apple if desired. Oven @ 400° for 20 minutes or until golden brown.

Apple Pizza

For the dough and filling:
1/2 loaf of 8 ounce frozen bread dough (thawed)
8 ounces cream cheese (softened)
1/4 cup sugar
1 egg
1 teaspoon vanilla
4 cups apples (peeled & thinly sliced)
2/3 cup sugar
1/4 cup flour
1 teaspoon cinnamon

For the topping:
1/3 cup flour
1/3 cup brown sugar
2 Tablespoons margarine (softened)
1/2 cup slivered almonds

Easy to do:
Preheat oven to 350 degrees F.
First, place the bread dough on a greased 12-inch deep dish pizza pan or something similiar. After the dough has thawed completely, just pat it onto the bottom and up 1/2 inch of the sides of the pan. Then, let the dough rest for about 15 minutes.
Next, mix together the cream cheese, 1/4 cup of the sugar, egg and the vanilla until smooth and creamy.
Then, combine the apples, 2/3 cup of the brown sugar, 1/4 cup the flour and cinnamon. Arrange the apple mix evenly over cream cheese mixture.
Then, in a small bowl, mix together 1/3 cup of the flour, brown sugar and cinnamon. Cut in the margarine until the mixture becomes crumbly. Add the slivered almonds and then sprinkle this mixture evenly over the apples.
All you need to do is bake your apple pizza for about 40 minutes or until the dough has started turning to a golden brown.
The nice thing about this recipe is you can serve it warm (as a dessert?) or cold (as a snack?) If you serve it as a snack, it can be made ahead of time and stored in the refrigerator ready to whip out at a hungry moment's notice! Your family will be thrilled!

Two Ways to do Beef Stew


Beef Stew
Steak chop up into bite size pieces
mixed veggies(beans, corn, peas, carrots)
boiled potatoes
beef broth
onions
some garlic powder, and pepper
(I can't give you an exact measurement on these as I just shake it in. But I would say between 1-2 tsp. of each.)Put all ingredients in the crockpot in the morning and walk away.


Using Leftovers.....

Sorry there isn't more specific measurements but when it comes to making stew I just throw it together with whatever I have in leftovers after having roast, carrots, and potatoes casserole.

Leftover roast
1/4c. to 1/2 c. barley(uncooked)
carrots(cooked and diced)
potatoes(cooked and diced)
bag of frozen mixed veggies or 1/2 can/bag each of green beans, corn, and peas.
1-2 cans beef broth
water(mostly to rinse out the cans)
can of stewed tomatoes(optional!)
Salt and pepper
dash or two of garlic powder
minced onion
chopped celery and green pepper

Mix all together. Simmer on stove for 3-4 hours or put in the crockpot for 6-8 hours on low. Watch as the barley cooks that you don't need to add more water or broth.

MY notes:I use cans of beef broth or the leftover broth from the roast, carrots and potatoes rather than water and bouillon because of the salt content in bouillon. Want soup add another can or 2 of broth.

All in One Chicken Meal

4 ½ cups frozen shredded hash browns
2 cups frozen green beans
1 cup frozen sliced carrots
4 chicken breast
1 can cream of chicken soup
¾ cup water



Use an ungreased 9x13 baking dish. Combine first 3 ingredients. Top with chicken breasts. Combine remaining ingredients and pour over chicken and veggies. Cover and bake at 375° for 50 minutes. Uncover bake 25-30 minutes or until chicken juices run clear. Sprinkle with cheese if desired.

Chicken Bake

**this is a modified way of doing chicken potpie***

Veggies(your choice)
Chopped cooked chicken
1 can chicken gravy
1 cup shredded cheese
¼ cup onion
1/8 tsp. black pepper
1 pkg. crescent rolls

Stir all together except for crescent rolls. Separate crescent rolls into 2 rectangles. Seal seams. Cut into 4-1 inch wide strips. Place over chicken in lattice pattern. Bake at 375° for 20-25 minutes

Menu Plan Monday



**This is just a plan and plans have the ability to change at the cook's discretion! Last week's menus seemed to go off without too much changing around! I didn't post last week's menus due to just being soooo busy lately. Last week's menus went well! Towards the end of last week, I had to change my menus around, but we survived. I actually was able to get something done in the crockpot for yesterday so we didn't eat out after our busy afternoon and evening. Lunches listed below are for the kids and I, dh's lunches are not included as he normally will just take what leftovers are available. Sunday(10-14)

Breakfast: cinnamon rolls, eggs, bacon, hash browns

Lunch: chicken nuggets and fries

Dinner: crockpot chicken rice casserole, leftover homemade bread

Snack: no snack due to late dinner

Monday(10-15)

Breakfast: cereal, toast or banana muffin

Lunch: leftovers

Dinner: goulash and corn muffins

Snack: "snack basket"

Tuesday(10-16)

Breakfast: waffles and fruit

Lunch: sandwich and chips

Dinner: crockpot roasted chicken, mashed potatoes & gravy, green beans, leftover bread

Snack: "snack basket"

Wednesday(10-17)

Breakfast: bagels and yogurt

Lunch: leftover pizza treats

Dinner: chicken veggie casserole(potpie), biscuits or rolls

Snack: mystery snack

Thursday(10-18)

Breakfast: pancakes, eggs, sausage

Lunch: chicken nuggets, fries

Dinner: bbq pork or sloppy joe sandwiches, fries, corn (still haven't had this from the plan 2 weeks ago)

Snack: "snack basket"

Friday(10-19)

Breakfast: cereal and toast

Lunch: sandwich and chips

Dinner: chicken rice soup(using leftovers from Sunday), homemade bread

Snack: ice cream

Saturday(10-20)

Breakfast: "Cook's Choice"

Lunch: pizza or leftovers

Dinner: not sure

Snack: popcorn
